I don’t know about you but I LOVE pancakes.

Recently I changed the way I eat. These changes exclude the eating of gluten, wheat products and dairy amongst other things, anyway pancakes with no gluten’s or dairy! How do I get around this and still have my beloved pancakes? “Buckwheat” Hooray!  Buckwheat is not a grain or wheat it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains .

Buckwheat is great to replace rice or couscous or burghul .Oh sorry, that’s another story, back to pancakes.

No dairy? That’s easy use nut milk, I prefer almond milk myself.

These are buckwheat pancakes. They are sumptuous. It took me a few attempts to get the recipe right, but now I’ve got it right I’m going to share it. You can find the recipe on our recipe page.

I serve my pancakes with fruit, coconut yoghurt and maple syrup. At Tweed Fruit we have cow’s milk yoghurt and sheep’s milk yoghurt, fresh cream from Norco and local honey. Whatever floats your boat.

You can use this pancake recipe for Pikelets or even Blinis for canapé’s.
