1 bunch asparagus

8 sml zucchini

¾ cup stock

100 mls macadamia oil

Method

Cut asparagus & zucchini into chunksasp

Place in oven proof dish with oil , stock

& cracked black pepper. Cover with foil &

bake for 35-40 minutes in preheated oven

(180-200).

Tomato & herb dressing

4 roma tomato

1 cup coriander

1 cup basil

100 mls macadamia oil or olive oil

2 cloves garlic

1 lemon juiced

2 teaspoons salt

2 teaspoons ground coriander (optional)

Method

Dice tomato, crush garlic, finely chop herbs.

Put all ingredients (except lemon juice ) into a

bowl and toss to combine. Take asparagus and

zucchini out of oven. Add lemon juice to tomato mix, spoon over top of vegetables

and serve.

This dish is great served hot, or the next day cold as a salad. Just add some olives and fetta, its great with lamb.
