Red Salad

1pkt Love Beets (pre-cooked baby beetroot)

Half a punnet mini roma tomato

1 small red capsicum

1 small salad onion

1 pomegranate

1 teaspoon sambal oeleck (chilli)

Salt and pepper

Method

Small dice Love Beets and red capsicum, cut mini roma’s in half or quarters. Dice salad onion put all ingredients into a bowl add sambal oeleck and season with salt and pepper. Cut pomegranate in quarters and remove seeds into a bowl. Remove any pith. Scatter pomegranate over the salad. Serve with cashew hummus and green salad. This is one of my favorite meals in the summer.
