Once you have peeled and cut the flesh from the seed, line a tray with baking paper and place your mangoes flat side down onto to the baking paper lined tray. Don’t cover them just place them in the freezer overnight. The next day, take your frozen mango cheeks off the tray and place into a bag or container. If you freeze them this way you can take out as much or as little as you need as they are all individually frozen and are not all stuck together. Enjoy your mangoes fresh and frozen.
